Vegan Mallomars!

Ok, certainly not healthy, but Marshmallow Fluff has no gelatin in it. And vegan chocolate is easy enough to score. As are Carr's biscuits (but I might actually substitute Hit biscuits instead... for the pure overkill of it all)

    There is good stuff at my heath food store calleg Ricemallow creme. It has total marshmallow flovor with amazing snot like texture. Good stuff.

      they *were* awesome, *were* as in ... every last one of them were gobbled up within a day of being made. they were best just about five minutes out from the freezer. if they worked their way to room temp, the chocolate melted waaaaay too easily (and made for those evidence producing choco-lips that says "look! i scarfed a bunch of these whilst you weren't looking!!"

        I ended up storing them all in the refrigerator. That way the chocolate didn't melt and everything held together really well---YUM!!

    So I made these last night and they actually turned out rather well! Although, since it was my first time making them, they certainly can use improvements and now I know how to start tweaking them. I did end up using Ricemellow which tasted fine. The biscuits were, oddly enough, hard to find. The only ones I could find at Rainbow or Whole Foods were Oatmeal and Ginger Biscuits---good on there own, and good made with the cookies, but I think that using smaller ones next time will work better. I am going to have to do a massive search, though, since those really were the only round flattish cookies that I could find. Where do you get Carr's Wheatmeal biscuits? I also was thinking that some kind of chocolate mint cookie would make a good base too. I found some really great bittersweet chocolate, but as I was melting it, it went from a stage of meltiness with some lumps still in it to a stage where it was starting to get to thick crumbly....I've got to find some way to keep it melty and get all the lumps out before this happens. Because it had started to harden, it was a little more difficult getting it evenly coated over the cookie and ricemellow. However, all in all, they tasted great and one of the comments I heard from a friend who tried them was "they taste like smore's". And they meant that to be a good thing. I'm really excited to try these again, though.

      to melt the chocolate, use a double boiler instead of doing it directly on the heat-if you don't HAVE a double boiler, try a metal bowl in a saucepan, or a smaller saucepan inside the large. this will help the chocoalte to melt, while giving you a nice even texture.
