ok i totally snagged this from another tribe and can't take any credit for it ....I also have yet to try it BUT it sounds yummy....make the necescary substitutions to veg it out....
Zucchini Feta Pancakes
3 c grated zucchini
1/2 t salt
2 large eggs, beaten
3 T flour
1 c crumbled feta cheese
olive oil for frying (I use olive oil spray)
1 c sour cream mixed with 1/2 dried oregano, for serving
Toss zuke with salt. Place in a colander and let sit for 30 minutes, then press dry between peper towels (I squeezed fitsfuls, then dried with paper towels). Transfer zuke to z mixing bowl and add eggs, flour, and cheese. Mix to combine.
Heat oilin a large skillet over medium heat. Spoon small amounts of batter onto the hot oil to make 2"-3" pancakes. Cook for about two minutes on each side.
I re-oiled the pan between batches.
Serve with a dollop of sour cream (I served them without this). Makes 8-10 pancakes - count on two or three per person as a side dish.
