hey fam--what are some yummy vegan cheese alternatives. most that i've tried are slimy, asmelly and don't melt like milk cheese. except for tofutti mozzarella slices, which were all right. do you have other options?

Sun, February 12, 2006 - 1:07 PMOf store-bought vegan cheeses out there, I think that Follow Your Heart is the best. It melts well and has a good taste. However, my favorite vegan cheeses are the ones I have made from the Ultimate Uncheese Cookbook. YUM! -

Tue, February 21, 2006 - 2:49 PMI have that book, but lost steam after I wasn't thrilled with a couple of the recipes. The one I just made this weekend came out a little grainy even though I processed the heck out of it, and has a really strong flavor from the onion & garlic granules.
What are the best recipes from that cookbook? Maybe I'm making the wrong ones... -

Tue, February 21, 2006 - 6:08 PMOff the top of my head, the best recipes of the ones I have tried are (and I'm sure there are more I am forgetting, but you can start with these and see what you think--also, when you do make them, I'm curious to hear what you think):
Crock Cheeze is awesome
Hot Parmesan Artichoke Dip was pretty good
Parmezano Sprinkles I keep on hand in the fridge to put on top of pasta, salads, or anything really
Melty White Cheeze---I make this one a lot---I love dipping tortilla chips in it---this one has passed the omni test too
Macaroni and Cheezes are pretty good too
Oh, and there's a broccoli, rice, waterchestnut cheezy dish that's also fabulous...I don't remember the name off hand, though.
Also, I really love the Cheez Please Soup! And I have heard rave reviews of the Philly Potato Chowder

I think the problem was that I was going for the cheezes that I thought I'd put on sandwiches, perhaps my problem is that I'm just setting my expectations up the wrong way... -

Wed, February 22, 2006 - 6:56 PMI agree with Ann. Follow Your Heart is better than VeganRella, but this is completely subjective and everyone has their own ideas of what they like best. Follow Your Heart does melt really well and I think that the tast of most of their varieties are quite realistic too.

Tue, May 16, 2006 - 2:55 PMa lot of the nut cheeses in RAW can be actually cooked with-- cashew and walnut cheese makes a great ricotta substitute in lasagna.
